If you were to count all of the meals your mom made for you when you were a child, you would probably have as she would say “enough to feed a small army.” Why not invite Mom over this Mother’s Day for a special meal in her honor? Whether itÕs for breakfast, brunch, lunch, tea or dinner, these recipes are a great place to start and finish.

No Fail Quiche

“This recipe never fails—it’s never runny and it gets done on time and is firm. I have made other quiche recipes before and kept putting them back in the oven because they weren’t done. This one never more than a few minutes, and most of the time, not at all!” Rita Butler, FL

Basic Ingredients:

8″ – 9″ deep dish pie crust
8 – 12 slices of bacon, crisped and crumbled (may substitute chopped ham)
1/3 cup minced green onion
1/3 cup bell pepper, finely chopped
1 cup Swiss or cheddar cheese, grated
3 – 4 heaping tbsp mayonnaise
Approximately 1½ cups milk
4 eggs
3/4 tsp salt
1/4 tsp sugar
1/8 tsp cayenne pepper

Optional Ingredients:
Spinach, broccoli or chopped tomatoes (no more than ½ cup of each)

Preheat oven to 425 degrees.

In a 2-cup measuring cup or larger, put 3 – 4 heaping tablespoons (regular serving spoons) of mayonnaise. Add enough milk to reach the 2 cup mark (approximately 1 1/2 cups); whip together. Add 4 eggs; whip together. Add salt, sugar and cayenne pepper; whip together and set aside.

Place prepared bacon, onion, green pepper, cheese and veggies (no particular order) in bottom of crust.

Pour filling over ingredients in crust. Bake 15 minutes at 425 degrees, then reduce heat to 325 degrees (recipe calls for 300, but I think the crust is more done on the bottom if at 325). Bake at 325 degrees for 30 minutes more or until knife inserted comes out clean. May bake an additional 5 – 15 minutes more, if needed.

Chicken Salad Croissants

1 lb cooked chicken, shredded
1 small red onion, chopped
3/4 cup mayonnaise
1 cup craisins
1/2 cup sliced almonds
1/4 tsp celery salt
Salt
Pepper
Poultry seasoning
Croissants, sliced

Boil chicken in a large pot; add salt, pepper and poultry seasoning to taste. When chicken is cooked (approximately 40 minutes), remove from heat to let cool. Chop red onion and place in a large mixing bowl. When chicken is cool, place chicken on cutting board and use a fork to shred the cooked chicken. Add shredded chicken to the mixing bowl. Add 3/4 cup mayonnaise, 1 cup craisins, 1/2 cup sliced almonds and celery salt, salt and pepper to taste. When ready to serve, spoon onto sliced croissants.

5-Minute Foster for 2
2 Tbsp sugar
2 Tbsp butter
Pinch of cinnamon
Dash of vanilla
2 bananas, sliced
Vanilla frozen yogurt

In a skillet on medium-high heat, add sugar, butter, cinnamon and vanilla. When sugar and butter begin to melt and bubble, add banana slices. Stir until slices are coated with sugar mixture. Immediately spoon banana slices and sauce over a scoop of vanilla frozen yogurt and enjoy.

Cook time: 2 minutes
